New Mexico Green Chile Stew
Ingredients
1 lb Finca Emile grass-fed ground beef
1 tablespoon olive oil
½ onion, diced
3 cloves garlic, minced
1 cup roasted green chiles, chopped
1 large sweet potato, peeled and diced
½ cup frozen sweet corn
1-14 oz can fire roasted, diced tomatoes
3 cups broth, or so (chicken or beef)
1 teaspoon cumin
1 teaspoon coriander
sea salt and ground pepper, to taste
For serving:
1-2 fresh limes
sliced avocado
sour cream
fresh cilantro
Preparation
Brown the ground beef in a large skillet. Dump the beef in the slow cooker.
Add the olive oil, garlic, onion, green chiles, sweet potato, corn and tomatoes.
Stir.
Pour enough broth over the ingredient to cover.
Add the spices, salt and pepper. Stir and cover.
Cook on high or low depending on your time frame.
Taste test and add the lime juice. Serve with slices of avocado, a dollup of sour cream and sprinkle with fresh, chopped cilantro. Serves 6. Enjoy!
