New Mexico Green Chile Stew

Ingredients

  • 1 lb Finca Emile grass-fed ground beef

  • 1 tablespoon olive oil

  • ½ onion, diced

  • 3 cloves garlic, minced

  • 1 cup roasted green chiles, chopped

  • 1 large sweet potato, peeled and diced

  • ½ cup frozen sweet corn

  • 1-14 oz can fire roasted, diced tomatoes

  • 3 cups broth, or so (chicken or beef)

  • 1 teaspoon cumin

  • 1 teaspoon coriander

  • sea salt and ground pepper, to taste

For serving:

1-2 fresh limes

sliced avocado

sour cream

fresh cilantro


Preparation

  • Brown the ground beef in a large skillet. Dump the beef in the slow cooker.

  • Add the olive oil, garlic, onion, green chiles, sweet potato, corn and tomatoes. 

  • Stir.

  • Pour enough broth over the ingredient to cover.

  • Add the spices, salt and pepper. Stir and cover.

  • Cook on high or low depending on your time frame.  

Taste test and add the lime juice. Serve with slices of avocado, a dollup of sour cream and sprinkle with fresh, chopped cilantro. Serves 6. Enjoy!
