Hondo Valley Picadillo

Ingredients

This is kid-friendly and great over rice, in tacos and more!

  • 20 oz Finca Emile grass-fed ground beef

  • ½ cup chopped onion

  • 3 cloves minced garlic

  • 1 fresh tomato, chopped

  • 1 teaspoon kosher salt

  • ½ red bell pepper, finely chopped

  • 2 tablespoons fresh cilantro

  • 4 oz tomato sauce 

  • 1 teaspoon ground cumin

  • 1 bay leaf

  • 2 tablespoons capers or green olives


Preparation

  • In a large skillet, brown ground beef over medium heat, breaking it up and season with salt and pepper.

  • Add onion, garlic, tomato, salt, bell pepper and cilantro and stir 1 minute.

  • Add olives or capers and about 2 tablespoons of the olive or caper brine, cumin, bay leaf.

  • Add tomato sauce and 3 tablespoons of water and mix well.

  • Cover and simmer for 15 minutes on low.

  • Remove bay leaf. 

    Serves 6. Enjoy!
