Hondo Valley Picadillo
Ingredients
This is kid-friendly and great over rice, in tacos and more!
20 oz Finca Emile grass-fed ground beef
½ cup chopped onion
3 cloves minced garlic
1 fresh tomato, chopped
1 teaspoon kosher salt
½ red bell pepper, finely chopped
2 tablespoons fresh cilantro
4 oz tomato sauce
1 teaspoon ground cumin
1 bay leaf
2 tablespoons capers or green olives
Preparation
In a large skillet, brown ground beef over medium heat, breaking it up and season with salt and pepper.
Add onion, garlic, tomato, salt, bell pepper and cilantro and stir 1 minute.
Add olives or capers and about 2 tablespoons of the olive or caper brine, cumin, bay leaf.
Add tomato sauce and 3 tablespoons of water and mix well.
Cover and simmer for 15 minutes on low.
Remove bay leaf.
Serves 6. Enjoy!
